Our Story
HFM Farm is a family business, three families with one recipe. The name is our name: Hill, Federico and Mayo, who have shared the same recipe for as long as anyone can remember. We started on one patch of ground, three families, and a story we are proud to tell. That is what our logo, the valknut, is about - three triangles for the three branches of the family.
Everything we make started with one recipe, and honestly we're not sure how far back it goes. It has been in the family for five generations. Monty Hill is the one who perfected the recipe into the flavor we know today as Monty's Original. It was the best way we could honor him as his recipe is what started it all. Today, the youngest of the five generations is in the business and we have no plan on slowing down.
For years, our jerky never made it past the kitchen. Joey Federico, 4th generation, made it for family, friends and anyone he worked with. What started as homemade jerky shared with the people around him eventually became something worth sharing with everyone. Before long they were his taste testers, telling him what worked and what did not as he played with new flavors. With their feedback, we created sweet, savory, spicy and tongue torching flavors that we have built into the lineup we sell today. Each new flavor was crafted to perfection using the same tried and true method that Monty used when perfecting Monty's Original.
When enough people had told Joey the same thing, that he needed to share his jerky with the world, he finally listened and in 2018, HFM Farm was born. Shortly after, Cracker County, an exhibit at the Florida State Fair in Tampa reached out to him with a wholesale order, and we have not looked back since.
What Joey sets out to make is real jerky. Handcrafted in small batches, honest ingredients, and the kind of snack you do not have to think twice about. Whether you are out in the woods, on a long drive, or just after something with more protein in it, it is made to go wherever you are headed.
These days Joey runs the show, and has now expanded into making not only beef jerky but also chicken and mushroom jerky, plus seasonings, and shipping them all over the country. Come say hi. We would love to talk.
